Besides delicious fruit, various vegetables are extremely useful in a diet. When eaten in salads or as juices, vegetables have a strong antioxidant effect, representing probably the most important aliment if we take into consideration this point of view. They are rich in fibres, and they have an important role in cleaning the remnants from the intestinal tract after the digestion.
Their content rich in chlorophyll provide the organism with protection against the cancer, neutralizes the toxins and cleans the vital fluids from the organism. Easy and completely digestible, fresh vegetables go well with meat and pasta as well and they help at counterbalancing the effect of both.
The crucifers
This group of vegetables includes cabbage, cauliflower, broccoli, and Brussels cabbage. They have a strong protective effect on the mucous membranes, especially on the digestive and respiratory systems. They are real guardians of these organs against cancer, ulcer, or different infections.
Rich in antioxidant nutrients such as betacarroten, C vitamin or selenium, the crucifers protect the organism of all toxins absorbed from the polluted invironment.
It is interesting to mention that the crucifer vegetables had always been very important in the traditional alimentation from the Far East, especially in the Chinese traditional cuisine.
The root crops
The root crops are rich in minerals and full of the stabilizing energy of the earth they grow in. Some of them, such as carrots and radishes are consumed like regular vegetables, but the majority are mostly spices.
Many of them, such as garlic and bur, have important curative properties. The horse radish, a traditional spice used a lot in Europe and Asia as well, stimulates the liver and the gall bladder, that has a big role in taking care of the animal fat and proteins.
Horse radish has always been remarkable for its digestive properties, especially in the Balkan cuisine. It is even said that Confucius used it at every meal.
The onion helps cleaning the congestions and eliminating the mucus excess from the digestive tract. But garlic is most probable to be the most benefic of all; it has been used for thousands of years all over the world, not only for its cooking effects that had been very appreciated, but especially for its well known curative effects. It was observed that garlic has the following properties: inhibiting the tumors, makes better the activity of white globules, increases the production of antibody, destroys fungus such as candida.
Garlic is not only the strongest natural strengthener of immune system, it is also appreciated as a strong sexual tonic, reason for which it is prohibited in many Asian monasteries.
Vegetables with leaves
Green leaves contain a lot of chlorophyll, one of the best cleaners and detoxifiers existing today. Consumption of green vegetables with leaves helps eliminating the unpleasant smell of the organism, by neutralizing the acidity and protean putrefaction. Fresh coriander is probably the most efficient. Due to the chlorophyll , green leaves have the capacity of transforming solar energy into vegetal material and this solar energy is released in our body when we consume and assimilate green vegetables. Therefore, leaved vegetables function as transformers of the revitalizing sun energy.
Together with fresh fruits, fresh vegetables truly represent a sure potion for a healthy and young organism.
